Вид мороженного «пломбир» популярен на территории пост-советского пространства, его можно найти буквально в любом магазине. Но стоит разобраться в его истории чуть подробнее, чтобы выяснить, почему он так сильно полюбился людям.
История появления
Но что вообще значит слово «пломбир»? На обывательском уровне часто встречаются заблуждения, мол название как-то связано с зубными пломбами, ведь они тоже белые, а от большого количества мороженного могут заболеть зубы. На самом деле пломбир так назван в честь Французского города Пломбьер-ле-Бен, в котором в XIX веке впервые изобрели этот сорт мороженного. Имя изобретателя неизвестно, мы знаем только, что рецепт заключался в повышенном содержании яиц и жирных сливок.
Пломбир получил распространение сначала во Франции, а затем и во всей Европе, включая царскую Россию. Разные страны дорабатывали рецептуру под себя, формула пломбира в России и во Франции могла немного различаться, но базовый принцип был прежним — повышенная доля сливок.
С приходом советской власти производство пломбира в России свернули, но цикличность истории взяла своё и в 1938 году Сталин отправил Анастаса Микояна в «Штаты» за новыми рецептами. Среди прочего из Америки в СССР попал и пломбир. Производство запустили на американском оборудовании по американской рецептуре, а требования зафиксировали 12 марта 1941 года в ГОСТ под номером 117-41.
Популярность пломбира
Объёмы производства советского мороженного достигали 450 тысяч тонн в год, в Советском Союзе его полюбили все, кроме того в больших количествах мороженное отправляли на экспорт в больших количествах, больше экспортировали только США. В СССР не было дефицита мороженного, его всегда хватало, а цена всегда была доступной. Даже зимой. При этом пломбир всегда был качественным и одинаковым на вкус в любом уголке страны советов, что обеспечивалось тем самым ГОСТом. Неудивительно, что советский пломбир оценили по достоинству во всём мире.
Сейчас в России производство мороженного регламентирует в первую очередь ГОСТ 31457-2012. Стандарт содержит обязательные положения, которым должны следовать производители. Например, в стандарте указано, что при производстве молочного мороженного полагается использовать 0,5-7,5% молочного жира, при производстве сливочного — 8,0-11,5%, а для пломбира — 12,0-0,0%. По сути это означает, что общее правило не изменилось с XIX века, в пломбире молока и сливок всегда больше, чем в другом мороженном.
На практике это, правда, не означает, что мороженное будет всегда качественным и вкусным. Одни производители берут 12% сливок, другие — 20%, такую разницу сложно не заметить. К тому же существуют и другие маркетинговые уловки и стандарты, описание которых выходит за рамки данной статьи.
Итог
Это не мешает пломбиру быть самым популярным видом мороженного в России. Пломбир может быть в стаканчике, в вафлях, в ведёрке, просто так или на палочке (тогда это уже эскимо), но люди всё равно любят его. Не нужно быть экспертом, чтобы предположить секрет популярности пломбира. На популярность лакомства влияют несколько факторов: гарантированное качество и вкус, обеспечиваемые оригинальной рецептурой, а также доступная цена — так как в пломбире нет ничего лишнего, он стоит значительно дешевле чем, мороженное с добавлением чего-либо.
