Не секрет, что у большинства народов и стран есть свои уникальные продукты, которые возникли в результате определенных специфических условий проживания в той или иной местности или традиций. Одним из таких продуктов является один из самых твердых (если не самый твердый) сыров в мире, о котором и пойдет речь.
Называется такой сыр Chhurpi (или Durkha) и является традиционным непальским продуктом, который был средством выживания для
многих отдаленных общин Непала (и в других областях Восточного Тибета и Гималаев) на протяжении многих веков. Традиционный рецепт изготовления данного сыра остается неизменным, изготавливают его из молока
яков или чаури (помесь яка и обычной коровы), которые питаются специфическими для данной местности травами, придающим сыру неповторимый вкус и питательность. Существует два вида Чхурпи —
мягкий и твердый. Мягкий сыр обычно употребляется в качестве гарнира к
рису, как начинка для традиционных пельменей или даже как суп. Однако, именно
твердый сорт делает сыр chhurpi известным во всем мире. Если Вы говорите, что пробовали твердые сыры (например, выдержанный пармезан), значит Вы не пробовали чхурпи.
Сыр, по ощущениям его пробовавших, почти такой же твердый, как
если положить в рот камень. Именно поэтому сразу взять и откусить его кусочек вряд ли получиться, для этого его требуется подержать во рту около часа. Вкус сыра достаточно острый, с привкусом копченостей и сладкими нотами.
Твердый сыр является производной от мягкого варианта Чхурпи, который готовят, нагревая молоко до 24 градусов по Цельсию, затем отделяют пахту (обезжиренные сливки). Полученную массу заворачивают в мешок из ткани (обычно это из джута) и подвешивают, чтобы избавиться от избытка воды, периодически прессуя его булыжниками. После этого, полученный блок разрезают на
более мелкие куски, которые подвешивают на открытом воздухе или над кухонными плитами, чтобы они
затвердели. Окончательная ферментация сыра происходит через 6-12 месяцев.
Окончательно высохший и готовый твердый Чхурпи фактически невозможно откусить не сломав себе зубы.
Поэтому его нужно предварительно размягчить, чтобы жевать. Опытные поедатели данного «лакомства» держат его во рту часами,
периодически пережевывая внешние слои по мере их размягчения. Таким образом, пережевывание даже небольшого блока чхурпи (размером с ириску) может занять до
двух часов. Удивительно то, что сыр сохраняет свой вкус все это время. Даже размягченный сыр по своей консистенции напоминает твердую жевательную резинку.
Нужно отметить, что сыр очень питательный и имеет высокое содержание белка, что наряду с абсолютной неприхотливостью к условиям хранения сделало его одним из важных продуктов выживания в суровых условиях горных условиях страны, где много пастухов, став важной частью ее культуры. Срок хранения такого сыра составляет не менее двадцати лет. Продают его в виде небольших кусочков или длинных брусков. Кстати сказать, из-за такой твердости сыра, он стал популярным в мире в качества лакомства для собак для здоровья зубов.
