Ученые из Колледжа естественных наук при университете штата
Мичиган нашли способ отключения механизма, при котором картофель вырабатывает
канцероген акриламид.
Ежегодно использование картофеля в сфере быстрого питания
приносит в США 240 млн. долларов. Спрос на картофельные чипсы остается высоким
круглый год, а сорта картофеля, используемые для этого, выращиваются только в
теплый сезон. Разумеется, что часть урожая отправляется на хранение при
пониженной температуре.
Как раз во время хранения в картофеле запускается механизм превращения
крахмала в сахар. Когда такой картофель с хранения попадает на производство по
приготовлению чипсов, то при тепловой обработке сахар в картофеле начинает
превращаться в акриламид. К сожалению сахар накапливается не только в кожуре,
которая идет в отходы.
Чипсы, приготовленные из такого картофеля при обжарке приобретают
более темный вид, отличный от любимого покупателями золотистого.
Но дело не только в цвете. Как раз акриламид ассоциируется с
повышенным риском развития рака из-за его канцерогенных свойств.
Группа ученых из Колледжа естественных наук при Университете
штата Мичиган нашла ген, отключение которого блокирует активацию механизма
превращения крахмала в сахар и делает приготовленные чипсы из картофеля с хранения
при низкой температуре гораздо менее потенциально опасными.
В настоящий момент в теплицах колледжа апробируются и изучаются
методы выращивания улучшенных сортов картофеля перед запуском массового производства.
