В большинстве супермаркетов представлен широкий выбор вкусных вин. Однако если вы не опытный ценитель вина, решение о том, какую бутылку купить, может оказаться непростой задачей.
Теперь эксперты выяснили: когда дело касается белых или розовых вин, всегда следует выбирать напитки, которые продаются в темных бутылках.
Прозрачные бутылки пропускают солнечный свет, что может привести к явлению, называемому «солнечным ударом». В худшем случае это может привести к тому, что вы будете дегустировать мокрую собаку, вареную капусту и канализационные стоки – независимо от того, сколько вы за это заплатили.
Вино, хранящееся в прозрачных бутылках, почти наверняка будет хуже на вкус, чем даже более дешевое вино, хранившееся в темной бутылке. Причина в том, что прозрачное стекло не защищает вино от ультрафиолетового излучения солнца или искусственного освещения.
Когда ультрафиолетовые лучи попадают на вино, они вызывают реакцию аминокислот и образование соединений серы. Эти соединения ответственны за неприятный запах, характерный для многих бутылок белого и розового вина. Под прямыми солнечными лучами вкус вина может начать меняться уже через 30 минут.
«Масштаб этой проблемы, вероятно, намного больше, чем любой другой винный порок, и все же мы на самом деле не говорим об этом. В основном, мы продолжаем притворяться, что это не проблема, в то время как это фактически лишает нас законного наслаждения вином. Это грабеж среди бела дня во всех смыслах этого слова», — рассказала Times мастер вина Сьюзи Барри.
Исследование, проведенное в 2022 году Университетом Тренто, показало, что в бутылках Шардоне и Пино Гриджио, хранившихся в прозрачных бутылках, наблюдалось значительное увеличение содержания химического вещества под названием 4-гептен-1-ол.
«Эти вонючие соединения, по-видимому, ответственны за неприятный привкус вареной капусты и иногда образуются в вине, подвергающемся воздействию источника света», — пишут ученые в своем исследовании, опубликованном в PNAS.
Кроме того, всего через неделю пребывания на солнце в вине, хранящемся в прозрачных бутылках, наблюдалось значительное снижение содержания химических веществ, ответственных за приятный вкус.
В винах было потеряно 10–30% терпенов — соединений, придающих винам цветочные и фруктовые ноты, — и 30–70% потери ноизопреноидов — соединений, придающих напитку сложные древесные ноты.
Между тем в темных бутылках не наблюдалось увеличения содержания неприятных химикатов и сохранялся приятный вкус в течение 50 дней.
Поскольку производители белого и розового вина часто стремятся подчеркнуть цвет своего вина, они обычно предпочитают прозрачное стекло цветному. Сильнее всего страдают от этого легкие деликатные вина.
Крис Мерсер из винного журнала Decanter утверждает: «Наибольшему риску подвержены, как правило, белые вина, особенно более деликатные, а также игристые и розовые вина».
С другой стороны, красные вина на самом деле лучше выдерживают воздействие света, поскольку содержат более высокий уровень полифенолов. Этим соединениям, содержащимся в винограде, требуется больше времени, чтобы расщепиться под действием света, и поэтому они дольше сохраняют свой вкус.
Сьюзи Барри предупредила: «Что совсем нехорошо, так это наливать вино в прозрачный бесцветный бокал, потому что он пропускает большую часть света, включая самые вредные виды. А какое вино обычно разливают в бутылки из прозрачного стекла? Конечно, самые уязвимые сорта вина».
Эксперты утверждают, что некоторых проблем можно избежать, если хранить вино в прохладном темном месте, вдали от прямых солнечных лучей. Однако некоторые полагают, что лучше вообще избегать покупки вина в прозрачных бутылках.
Марк Драйвер, винодел и владелец Rathinny Estate в Сассексе, порекомендовал: «Когда вы в следующий раз захотите купить бутылку розового или более нежного белого вина, такого как Пино Гри Блан, поищите бутылку темно-зеленого или янтарного цвета».
