Компания
«Эфко» представила широкой публике сладкие белки браззеин и монеллин, которые на
вкус практически не отличаются от сахара, но в тысячи раз его слаще. Они не приводят
к инсулиновому отклику и значительно снижают калорийность блюд, к тому же белки
еще и значительно дешевле, чем сахар или традиционные подсластители при
эквивалентной сладости.
В
природе браззеин содержится в плодах и листьях западноафриканского растения
Pentadiplandra brazzeana, а монеллин получают из тропического Dioscoreophyllum
cumminsii. Однако российские ученые научились встраивать их в генетический код дрожжей,
которые затем начинают клонировать белки практически в неограниченных
количествах.
Специалисты
уже провели масштабные испытания на животных, результаты которого показали, что
браззеин и монеллин, полученные таким способом, не вызывают аллергических
реакций и значимого изменения микробиоты кишечника, не обладают токсичностью и
мутагенностью. На завершающем этапе находятся и клинические тесты на людях,
предварительные данные которых также свидетельствуют о безопасности употребления
этих соединений. Наконец гостям презентации были предложены мороженное и
конфеты на основе этих белков, которые по вкусу было не отличить от обычных продуктов.
Российская
технология производства сладких белков уже имеют сертификат в ОАЭ, и специалисты
«Эфко» не видят особых преград для получения в ближайшие месяцы апробации в России.
В остальных же странах пройти сертификацию пока не получилось из-за противодействия
со стороны производителей сахара и подсластителей. Белки планируют продавать в виде
растворов или добавлять в продукты на этапе производства, поскольку феноменальная
сладость не позволяет их достаточно точно дозировать в домашних условиях.
